What I Cook in Our Airstream | Salmon Salad with Four Ingredient Dressing

Here’s one of the most popular Airstream questions I get… “What do you eat?!”

As some of you know from reading my book, we have some dietary restrictions that enable Brian to live a healthy and full life.

Mainly, we all try to avoid gluten.

So how are we feeding a family of five in a tiny kitchen while maintaining our dietary restrictions?

I’m glad you asked!

For us, it’s all about keeping it simple and saving time so we can be outside adventuring instead of inside prepping food.

Here’s one of our family-favorite recipes!

Ingredients:

1 Package Ready-to-Go Salad Mix (I used Organic Girl spring mix)

1 Piece of Grilled or Prepared Salmon (I bought it pre-grilled and ready to go from the grocery store)

1 Orange, sliced

Handful of Cherry Tomatoes, halved

Handful of Pine Nuts, toasted (to toast pine nuts, place them in a dry sauté pan and cook over low heat for 10 minutes, tossing often, until lightly browned)

Handful of Capers

Parmesan Cheese (you’ve got to use the real kind from Parma, Italy. The salty tang makes all the difference!), peeled with a vegetable peeler. Use as much or as little as you want.


For the Dressing

1/4 C lemon juice (it has to be fresh!)

1/2 C good olive oil

1 tsp kosher salt

1/2 tsp freshly ground black pepper

Whisk it all together.


Combine everything together in a bowl with the vinaigrette. I like to layer the greens as a base with the orange slices and cherry tomatoes on top, then the salmon, then the capers and pine nuts, topped with the dressing drizzle.
